Suiker brood/ Sugar bread



Who would have thought joining up for the World bread day 2008 would take me a frency in baking breads. I do make my own bread every few days for daily use. But special breads, that is something I hardly do.
Whe the round up was posted I was glued to Zorra's post here . I have gone to that post again and agian.
First time when I saw the round up my thoughts were yeah one don't need a bread book any more just have to come here ( said that i just ordered a bread book few days ago)

While scrolling through all those delicious variety of bread, I hit jackpot.
I saw this wonderful Suikerbrood which was made by Sigrid from Cavoletto di bruxelles

I was delighted when I saw it as this is a bread which I always buy from the bakers, but never had a recipe to make myself.

So overjoyed I checked her place, but my joy didn't last long as the recipe was in Italian.

And I was like ohhhhhhhhhhhhhhhhhhhhhhhhhh I don't know italian. So i went to my hubby and asked him do you know Italian ( he has been few times to italy) and he was like well if it is some music terms then i knwo them in Italian.
I was like well that doesn't do me any good.
But I didn't give up.
I copied the text from her blog and translated in Bable fish and wallah there it was the reccipe in english.
It is not fully accurate. The translations are never fully correct in my expirence. But i got what the ingridients are and then how to make the bread too.
So here is the delicious suikerbrood which we all love and i am fully certain this is a recipe for keeps.

Here is my translated one :-)
320g flour
butter 125g
pearlsugar 120g ,you can fing in wiki for more info
She used fresh yeast i used dry yeast 7 gm
water 15cl
egg yolks 2
sugar 15g


Ready to go in the oven

I made the dough like this.

Mixed all the ingridients except the pearl sugar and make a bread dough.

You can make the dough with you hand or with a electric mixer with dought hook. It took almost 10 minutes with the dough hook.

Sprinkle flour on the counter and transfer the dough to the counter. Divide the dough in two part. One part of 500g and the other remaining dough should be (approximately 150-180g)

Leave the two pieces to rest for some 15 minutes.
Now mix in the pearl sugar to the 500 gm portion of dough.
Roll out the other portion to form a disc of approximately 25cm of diameter.
Take the dough which is mixed with the sugar and place in the middle of the rolled dough and i just covered it up with the rolled out dough into a ball.

Cover and eave in a warm place for a hour.

When it has doubled up brush with egg white and bake in a pre heated oven 220°c for , well i think i did for 40 minutes.

Raaji They are a special kind of suagr cubes, I have heard that it is mostly available in Belgium. But i have seen in some US blogs too.

Just like you I know that round up for world day of bread is grand but I'm still buying books!
Fun that you picked this one and then had to jump through the translation hoop so many times (thank goodness for babel fish as limited as it is). The Bread Baking Babes did this bread last month. Loved it!!

Yes, this does look delicious.
You did go to a lot of trouble translating the recipe but it was worth it. So are we going to see more special breads, since you have also ordered a bread book? I hope so.

suiker is a familiar word to me. there's a product in indonesia named palm suiker and we know it is sugar, palm sugar hehehe... back looking at the history that indonesia had been 300 years in Dutch colonial era, so it must be giving influence to the language. nice bread, happy!

My father is a huge fan of Sugar bread and I always try to bake one for him whenever we see my parents. He has yet to be fully blown away by any of the recipes i've tried. Simplicity is key, and yours looks perfect! Can't wait to try it.thank you for shearing your post.

Finla, I bought some Belgium Pearl sugar to make this Suikerbrood. Will make it in about a week or two and will post it at Aroma and FB. Looks yummy, good for Breakfast.
