Sundried Tomatoes in Olive oil.

I was not going to post anything more this week as I didn't had anything intresting to post. Can you imagine that. But then today afternoon while I was reading a recipe in one of my cooking books they asked for sundried tomatoes in oil.
I thought why not make them at home, anyway I still have a lot of the tomatoes i bought from Italy.

Last summer when we went for holiday to Italy I had bought some 4 huge packets of sun dried tomatoes. Have been using them regulary in dishes .

There is no recipe for this, I just added a hand full of dried tomatoes and poured good olive oil till they got filled. You can add herbs if you want, but i thought I will keep the taste as it is.

I will be suing this in pasta dishes, salades etc.....

The sundried tomato u got from Italy is quiet different what I have right now here! Such a vibrant pict shots! I wonder how u use in salad, do u drizzle?

I have sundried tomatoes and wondering what to do with them. Pouring olive oil over them will make them juicy and good in pastas. oh thank you very much.

The sun dried tomatoes in oil look good.I did not see a recipe, is just oil and tomatoes or did you add spices to them?

My husband is a big fan of sundried tomatoes .. so I keep making them in the oven. I think fried tomatoes will taste much better. :-)

We love sun-dried tomatoes in pasta and to make tapenade-type spreads too! Last year in summer I made them at home, but in the oven - you know how rare sun was in Belgium then!

I tried sun drying tomatoes last year and the day I cut the tomatoes, it started raining, in summer!!! :(
Must give it a go again this year.

Finla, finding it difficult to comment in other blogs too, have to type repeatedly or copy first and then post atleast 3 times. It keeps disappearing and shows error 404! I got tired and decided to take a break until next week. I will see if I can trick blogger edit post by opening a new blog and import the post to publish at FH on Wednesday, hope it works.

Love the sundried tomatoes in Pasta or Chili dishes. Looks yum, great idea to preserve in Olive oil too.

Cham I just slice them into half and add to the salade.

Foody guru I have written in my post there is no recipe , just added oil, didn't had any herbs as i wanted the taste to be pure.

An open book, i just did them yesterday so I think i will use them in few days few and then I am gonna keep then i the fridge as you said it get spoiled .

I often use prepared sundried tomatoes both just dry and those packed in oil. But I like to try to get away from commercial ones and make as much as I can myself. So this is a good idea. Why didn't I think of this!!! Plus, the oil after the tomatoes are used is also so tasty. Did you dry the tomatoes in your oven first?

This is news to me that you can just pour olive oil over them and leave it like that, without any heating required!

I always buy the sundried tomatoes in oil, and keep pouring more oil in it to keep it fresh. But making my own is a fantastic idea, I can really spice it up a bit too :)
