One of the first cake i ever made was cake with Cherries.
When ever I made this particular cherry cake , hubby used to say, she is busy making Mrs Liptons Cherry cake.
He named it bacause of the TV programme You rang me Lord. We used to watch them every week, it was so funny, the serial.
And the cook from that Manor was called Mrs Lipton and she used to make always cherry cake.
So in time I went from making simple cherry cake to this much more , how do i put it, heavier cake :-)
The cake is a bit sweeter with the addition of marzipan layer.

200 gm glaces cherries chopped
2-3 drops of almond extract
Preheat the oven to 160° c. Butter and line a deep 20 cm rpound cake tin.
Beat the butter and sugar in a bowl untill light and creamy. Pour in the eggs a little at a time and beat well after each addition.
Fold in the cherries, flour, almond extract untill evenly mixed.
Spoon half the mixture into the tin.
Roll out the marzipan into a 19 cm circle. Lay this on the top of the cake mixture in the tin, then cover with the rest of the mixture.
Level and scatter the almonds on top.
When it is baked, leave to cool in the tin for 20 minutes, then turn out on a wire rack and cool completley.

Maria,yeah here we love marzipan, thnkfull it is always availabel here.
Teresa Cordeo, do try this is ligher than the usual fruit cake and as there is marzipan it gives a christmasy tint to them.
